Summary: Remember the movie Moneyball with Brad Pitt? The movie is based on the book by Michael L. Lewis that tells the story of how the Oakland A's Major League Baseball team built a world class team by looking at how they recruited players. Restaurants can increase performance in their business if they look outside the standard metrics to see their business from a new viewpoint. We’ll discuss some "Moneyball" ideas that can help go past the normal KPI (Key Performance Indicators), the real cost of turnover, creating standards that raise accountability, and mining data in your guest check average.
